Mississippi Mud
Carol Jackson, 1976. Jen has extremely fond memories of this dish. It sounds like it may just be the most unhealthy dessert ever, too, which only argues for its divinity.- 2 sticks butter
- 1/2 C powdered cocoa
- 2 C sugar
- 4 eggs
- 1 1/2 C flour
- titch of salt
- 1 1/2 C chopped nuts
- 1 tsp vanilla
- 1 package of mini marshmallows
Melt butter & mix in cocoa. Stir in sugar & eggs, mixing well. Add flour and salt, blending well. Add nuts and vanilla.Pour into greased 13x9 pan. Bake at 350 degrees for 30-45 minutes. Remove from oven & cover with marshmallows. Return to oven for 10 minutes, remove & then spread icing.Icing- 1 1/2 sticks melted butter
- 1 box powdered sugar
- 1/3 C cocoa
- 1/2 C evaporated milk
- 1 tsp vanilla
- 1 C nuts, chopped
Sift cocoa and sugar together; add butter, milk, vanilla & nuts. Mix well. Spread onto cake over the marshmallows. Let firm then cut into 1" squares.
